NO MEASURING CUPS NEEDED!

Note: Any type of long grain rice is good for this recipe- Jasmine rice is my personal favorite.

Like Calgon, the Chinese have another ancient secret; how to steam the perfect pot of rice. This secret has been handed down to my family by Mei "Ahma" Li. Fortunately for you, I am not one for keeping secrets and I am handing down this information to you.
Ahma's trick: put any amount of rice in a sauce pot and add water, first-knuckle deep. Let your index finger touch the very top of the rice in the pot and add the water only up to your first knuckle. Set it on the stove on high heat, uncovered. Let the rice come to a full boil, reduce heat to the lowest setting, cover, and let steam for 25 minutes.
There you have it. Perfect rice, no measuring cups required, courtesy of Mei Li. Now do me a favor and throw out any rice product in your pantry that has "minute" in front of it.
